Meal Prep Monday - Cheesy Quinoa Breakfast Bake and Shredded Chicken

Can't believe it's Monday already! I had a great weekend running around dressed like a zebra for Santa Barbara Zoo Brew. Life is more fun in costume :)



I meal prepped this weekend for the first time in a very long time. I didn't do anything fancy but it feels great to get back to my cooking routine. 

Breakfast

This yummy looking Light & Cheesy Egg Bake by Carrots 'N' Cake put me in the mood for a savory breakfast. I decided to beef up my version with some extra veggies, chicken sausage, and quinoa. 



Cheesy Quinoa Breakfast Bake

Calories: 309 | Fat: 12 g | Cholest: 174 mg | Sodium: 533 mg | Carbs: 26 g | Fiber: 3 g | Sugars: 4 g | Protein: 25 g


1 cup uncooked quinoa
1/2 a yellow onion
1 cup chopped mushrooms
1 cup chopped broccoli
2 cups breakfast sausage
6 chicken breakfast sausage links
2 cups baby spinach
4 wedges Laughing Cow light Swiss cheese
1/2 cup light Mexican cheese, divided in half
4 egg whites
4 eggs
1 cup almond milk
1 tbsp red pepper
1 tbsp garlic powder

Preheat oven to 350 degrees.
Stir fry onion, mushrooms, broccoli and sausage in a large nonstick pan until onion is softened.
Add in spinach and cook until spinach is wilted.
Mix quinoa, light Swiss cheese, half the Mexican cheese, and veggie mixture together in a large greased oven safe baking dish.
Mix together the eggs, almond milk and spices.
Poor egg mixture over the quinoa mixture, making sure all the quinoa is submerged.
Bake for 45 minutes. 
Sprinkle remaining Mexican cheese over top and bake for an additional 15 minutes.
Serves 6.

This breakfast bake is full of cheesy flavor and all the quinoa and veggies make it very hearty. Definitely kept me full until lunch!



Protein

I made my slow cooker shredded chicken again since it's the easiest.



Sides

I also kept the sides simple, roasting broccoli, sweet potatoes, and green beans in the oven and cooking up some quinoa. 





Workouts

It's my birthday on Tuesday (!) and the bf is coming to visit again this weekend, but I'm still making sure to stay on track by following my monthly workout schedule.

Wednesday: Pilates reformer class
Thursday: GymRa 30 Min Total Body Intermediate Interval Workout with Dumbbells, 3 mile run
Friday: Rest
Saturday: FitnessBlender Total Body Boot Camp for Lean Muscles, 4 Mile Run
Sunday: Blogilates Muffintop Massacre, Abs on Fire

  4. We share a birthday week since mine is today :) I hope you have a great birthday tomorrow! The breakfast bake looks delicious. I've never thought of making a casserole with quinoa. I like that you don't have to cook it in advance and can just let it bake in the oven.
