Meal Prep Monday - Vegetarian for One

Today's my first day at my new job!! That means from now on I'll be in an office all day instead of running past beautiful scenery like this.


I'm actually really glad to be out of vacation mode and back to real life after two and a half weeks of no work. And as part of getting back into a healthy routine, I'm back to my usual meal prep ways this week. 

After a week of awesome road trip food, and since I don't have to worry about pleasing the meat loving bf, I decided to go all vegetarian this week.

Breakfast

In honor of the awesomely warm weather we've been having (sorry to all my East Coast friends who are still polar vortex-ing), I made a tropical themed overnight oats recipe for this week's breakfast.


Tropical Mason Jar Overnight Oats

Calories: 384 | Fat: 13 g | Cholest: 0 mg | Sodium: 186 mg | Carbs: 47 g | Fiber: 9 g | Sugars: 19 g | Protein: 20 g

1/4 cup oats
1 tbsp chia seeds
1 tbsp almonds
1/2 a ripe banana
1/4 cup frozen diced mango
1/4 cup non fat Greek yogurt
3 tbsp egg whites
1/2 cup unsweetened vanilla almond milk

Mix ingredients together in a mason jar.
Refrigerate overnight and enjoy!
Makes 1 serving.


Protein

I made baked tofu (using this recipe again) and also cooked some beans. Since they have the most protein of any legume, I boiled some frozen edamame and also made dried white beans in the crock pot. 


Sides

I baked sweet potatoes and roasted broccoli and cauliflower with garlic as usual. Except our oven is super smoky and our smoke detector is super sensitive, so I set off the fire alarm for about 10 minutes straight. So much more exciting than normal! 


Workouts

I'm still going to be working towards my Run This Year goal and trying to stick to my 10K training schedule as I get busy with work.

Monday: FitnessBlender No Equipment Upper Body Workout and 5 Minute Butt and Thighs Kettlebell Workout, Rec league volleyball
Tuesday: 35 minute tempo run
Wednesday: Zumba
Thursday: Easy 4 mile run
Friday: Rest
Saturday: Slow 6 mile run
Sunday: BeFit Yoga Shape Up: Detoxifying Workout

  2. The Tropical Mason Jar is so intriguiing! I've never worked with egg whites and I'm definitely afraid to do it, lol!

    1. I love egg whites! So much protein for so little calories, and you can't even taste them in this :)

  4. Yummmmm!!! Those overnight oats look amazing! I just can't get over eating cold oats though. Maybe I should give them another try. I think it's the greek yogurt in most of the recipes. I wonder if I would like it without the greek yogurt?
